Cakelani first began when a position in the Publix bakery opened up. She couldn't wait to join the team with cake decorating in mind. it was something she thought "would be fun to learn." The rest is history!
She worked there for two years, honing her skills in cake decorating and learning the ins and outs of running a bakery.
She began making cakes at home, even took her talents to the state of Oregon for a year before moving back home to Rochester, NY. When Covid hit, like many of you, Keilani was furloughed and not getting paid. UH OH! In an attempt to make money, Keila began making cake cups and taking orders. Cake cup sales really began taking off, and despite the pandemic- people were still ordering smaller cakes. After much success with sales and exposure in Rochester. Keila was faced with the question. “Do I pursue this full time?”. She was fortunate to be able to work part time for Heritage Christian Services and give FULL time Cake making a shot.
Keilani's hard work and dedication paid off. Today, Keilani continues to innovate and create stunning cakes that delight her customers. She takes great pride in her work, and her passion for baking shines through in every cake she makes.
Absolutely! Almost all cakes that are made with fondant can be made with buttercream instead and still look just as good. There will still be some fondant or gum paste, depending on decoration. Not all decoration can be made with buttercream and still have the same look and feel. If there is ever a concern that icing the cake in buttercream would not be recommended, I will definitely let you know so that you can make that choice.
Each tier is made with four or more layers, depending on the amount of servings needed.
I prefer to make any cakes the same day of the event, however, if scheduling is a problem..I always suggest to make the cake the day before, and keep it refrigerated until the time of your event. I have had a couple of customers pick up two days before their event, and said that it looked and tasted just as fresh as their previous cakes did that were picked up on the same day as the event.
If your cake is iced with whipped cream, it needs to stay refrigerated and cold. However, if it is Buttercream, you have a little more flexibility. I always recommend that the cake be refrigerated until the time of your event. The risk of disaster happening with your cake while sitting out for too long depends on if the cake is filled with fruits or other things that should be kept cold and the temperature of the room where it is being kept. Avoid placing your cake in direct sunlight, if it feels stuffy and hot at your event, I would check on the cake every so often to see if it looks as if it is melting, or any of the decorations seem to be sliding down. You then may want to place it in the refrigerator for a little bit. IF YOU DECIDE TO KEEP IT REFRIGERATED, remember to take your cake out of the cold at least 40 minutes before you would like to cut into it to allow the Buttercream to soften up!
I would YouTube “best ways to cut a cake” there are several videos that can show you easy techniques for cutting to get the most amount of servings. Remember to give small slices. A lot of people don’t eat much cake, and will throw a lot of it away if you serve too much.
